Recently I shared my homemade kimchi recipe, and since I have done that, I think it is quite natural that I would share some recipes in which you can integrate it. Besides fried rice and pasta, kimchi noodles is probably the fastest lunch that I can make. It is my go to when I have a busy day, and for me, they are one of the best comfort foods and I would highly advise you to try these at least once.
The list of ingredients is short and you pretty much have them in your fridge at all times. So, let’s get into it. The ingredients listed below are for two portions. In terms of noodles, according to what you use, you may want to adapt the quantity.

Ingredients:
- 164g kimchi (recipe here)
- 44g bacon
- 2 small green onions
- 1 tbsp soy sauce
- 1/2 tsp gochujang
- 1 tbsp neutral oil
- 2 eggs
- 80g noodles (weighed before cooking)
Method:
- Start by prepping your ingredients: cut the bacon in small pieces, finely chop the green onion, and chop the kimchi in smaller pieces if you have to. I find that chopping the kimchi really helps in coating the noodles better.
- Get a wok or a pan (I have a wannabe wok, so you can make this in anything and it will still be delish), heat it up and add the oil.
- Put some water to boil in a pot.
- Add the bacon in the pan, and wait for it to render the fat and become crispy. After that add the white part of the green onions and cook them for 2 minutes.
- Meanwhile, add the noodles to cook. (this may vary according to your noodles, mine are ready fast)
- Add the chopped kimchi in and stir for 2-3 mins.
- Drain the noodles and shake all the excess water. Add the noodles in with the kimchi and merge them together.
- Now you are done with the noodles, but this dish is not complete without a fried egg on top. The way the egg goes with kimchi is out of this world. So, I like to make mine basted and with a crispy bottom.
Now you are finished. This is one of my favorite lunch or dinner meals, it is very quick, it takes me 20 mins maximum to make, and it’s so delicious. The flavour the kimchi brings is just outstanding, and it makes any simple dish amazing.
