Oatmeal Crêpes

I will admit that I am not the biggest fan of oatmeal. I usually don’t like porridge, as I feel that I have to add too many things to it to make it taste good and most of the times it feels like a snack rather than a meal. I don’t like it as breakfast.

Now after I trashed oatmeal, I do see benefits in using it in various recipes and besides a high protein brownie that I am still trying to nail, I thought it can be a good replacement for flour in crêpes, as for them you don’t really need gluten development. This is the recipe that I came up with, it is gluten free, if you care about that, you can make them sweet or savory (if you don’t add any sweetener) and you can even make them dairy free.

So, let’s get into it and make them together, shall we?

Ingredients:

  • 80g ultra fine oats
  • 150g milk (I prefer whole cow’s milk, but I tried it with oat milk too and they turned out great)
  • 100g egg whites (you can use a whole egg if you prefer)
  • sweetener of choice (sugar/stevia/flavdrops)
  • vanilla extract
  • 5g ghee for cooking

Method:

  • It is as simple as it gets: add liquids in a bowl, add the sweetener of choice — I either go for some flavdrops from My Protein or 5g of sugar with Bourbon Vanilla. Mix them well and then add the oats. Make sure to have very fine oats, or oat flour.
  • To cook them, use a non stick pan on medium heat.
  • Add a tiny bit of ghee in the pan. I prefer ghee as it tastes like butter but has a higher smoke point.
  • Take a ladle of batter and spread it in the pan in a very thin layer. Make sure to mix the batter a little before every crêpe as the oats tend to sink to the bottom a bit.
  • Cook for 2 mins on each side, until the crêpes have golden specks.
  • The recipes makes about 5 crêpes.

To serve, you can use whatever you like: I like them with strawberry jam or some caramel spread, but I am pretty sure you will find something delicious to fill them with.

If you want to make them savory, exclude the sweetener and the vanilla and add a pinch of salt. Then you can go full-on cheese and eggs, bacon, whatever you like honestly. It is a very easy to customize recipe, and easy to pair with different fillings.
