Easy Matcha Tiramisu

If I have to choose my favorite dessert, it is probably a Tiramisu. But not any kind of tiramisu, I like a very classic one, maybe with a touch of chocolate in between the layers. I will show you my recipe for that one as well, but today, I want to show you a very simple recipe for a Matcha Tiramisu.

I love matcha and so far I have really liked desserts that had matcha in them. Also, this a version for which I really considered the calories in the final product, so you may notice that I did not use mascarpone, but a cream that has a very similar texture. You can use mascarpone, it will be amazing, just replace it with the same quantity, nothing else changes in the recipe.

Ingredients:
  • 2 eggs
  • 25g sugar
  • 250g Meggle Crème (or mascarpone)
  • 10g white chocolate
  • 4g Matcha powder
  • a cup of water
  • vanilla extract
  • 72 g ladyfingers (~8)
Method:
  1. Matcha Tea
    • Bring water to a boil, you will need a smaller cup (~150ml)
    • If you have a matcha whisk, that is awesome, use that one to make the matcha tea, but if you don’t, here is how I make mine: I take the matcha powder through a sift, to make sure I get rid of clumps. I then pour a little bit of water (~20-30 ml) and I use a small electric whisk that I normally use to froth my milk. I make sure that everything is nicely blended and then pour the rest of the water.
    • Another tip is to use a blender.
  2. The cream
    • To make the cream, we will start with the eggs. Separate the yolks from the whites in two bowls.
    • We are going to slightly cook our yolks, so place a pot with water on the stove. Bring the water to a boil and then reduce the heat to low. Place the bowl on top of that pot (make sure you use something that is heat resistant). And start whisking the eggs with a mixer. They need to get creamy and light in color.
    • Once that is done, let’s take care of the whites. We need to bring them to the consistency of a merengue. So whisk them up with the sugar until they are airy and glossy.
    • Now, add the mascarpone to the egg yolks. You can use a whisk, mixer or a spatula for this step. Add the vanilla extract as well.
    • Incorporate the merengue in the mascarpone and yolk mixture. Use a spatula and gentle movements, you want the cream to remain airy.
    • While you prep the tray and ladyfingers, put the cream in the fridge to chill.
  3. The setup
    • You can make small portions as I did in some glasses, or you can use a bigger dish/container to set up the dessert.
    • The rule is just as for a regular tiramisu: lady fingers first, dip them lightly in the matcha tea, grate some white chocolate, add a layer of cream, and repeat.
    • I used about 2.5 ladyfingers per glass
    • On the last layer of cream, I sprinkled a bit of matcha powder for some decoration (I also love matcha, so of course I added it).

You can customize the quantity of chocolate if you like, but I wanted to keep the dessert very light and also a bit lower calorie count than a regular tiramisu. The quantities listed by me will create three servings.
